Krone Borealis, a notable, vintage-only South African Méthode Cap Classique finds its home at the historic Twee Jonge Gezellen farm in Tulbagh, South Africa. Founded in 1710, the property has carved out a global reputation over the last 300 years. This particular MCC is made from grapes grown, and night-harvested in a distinctive terroir. Mineral in nature with aromatics of oyster shell and sea breeze. Fresh green apples, lemon balm, white peach and icy berry interplay the exquisite harmony of chardonnay and pinot. An undertow of biscuity intensity from 18 months lees maturation. Food pairing: Poultry, Seafood, Vegetables. Serving temperature: 8-10° C.
Taste: The fruit carries on to the palate with a fine, satiny mousse. A hint of icy berry at the core shows the exquisite harmony between the chardonnay and pinot noir. Finely textured with a seam of clean acidity, the extended lees time (18 months) layers on autolytic biscuity intensity and promises positive evolution with time.
Appearance: Straw yellow with elegant foam.
